Boxwood Biscuit Co. has its eyes on a new home in the Short North. The popular made-from-scratch biscuit, fried chicken, and breakfast concept has outgrown its weekend pop-up home at Law Bird Bar.
They are asking for your help raising $40,000 for the move and build out. The crowdfunding campaign is a flexible one, so any money donated will be collected by Boxwood Biscuit Co.
How will the funds be used?
The Boxwood Biscuit team needs the money for start-up capital: for special equipment, initial inventory costs, and payroll expenses.
A business built during the pandemic, Boxwood Biscuit Co. feels they are on the path to success because they have been operating successfully as a carry-out and delivery operations since opening in August of 2020.
“[We are] built to maneuver potential hurdles to standard operating procedures,” they say in their ask.
Along with their own space in the Short North at 19 W. Russell Street (formerly the home of Belgian Iron Wafel Co), they plan to expand hours to include breakfast, lunch, and dinner, throughout the week. They are planning to feature food that is easy to eat on the go, and have recipes in the works for vegan biscuits and fried chicken.
Boxwood Biscuit Co. is the first concept from the collaboration of Chef Tyler Minnis (of Angry Bear Kitchen and The Market IV) and Luke Pierce and Annie Williams Pierce (owners of Law Bird Bar).
The new restaurant is hoping to be open in Spring of 2021 and does not plan a return to the Law Bird space. While they will not have a liquor license at the beginning, they are not ruling it out.
