    Law Bird to Offer Unique Wines, Craft Cocktails in the Brewery District

    Annie Williams Pierce, a locally and nationally renowned mixologist, has announced plans to launch a new venture in the Brewery District. She’ll join her husband Luke Pierce in opening Law Bird, a wine and cocktail-centric bar taking over Village Pet Supply at 740 S. High St.

    The Pierces have been scheming over Law Bird for several years, looking to fuse elements from the wine and cocktail bars they’ve visited in their travels to develop a unique concept of their own. 

    The intimate space at the corner of Frankfort and High was the perfect destination for Law Bird, they say, with its high visibility, large windows, and placement in a neighborhood that is rapidly becoming a destination. They’ll have the newly opened Ambrose & Eve and sour brewery Antiques on High as neighbors.

    “We love being in a neighborhood that is developing more and more, especially for people in the neighborhood,” said Williams Pierce, “and we’re just really excited to be a complementary piece to the new things that continue to open there.”

    “Weird, but good” cocktails and unfamiliar wines will stand at the core of the Law Bird menu, accompanied by a selection of charcuterie and small plates. They’re placing a particular focus on orange wines, or white wines produced using methods typically reserved for red wines. Rather than removing the grape skins after pressing, as typically done with whites, the grape juice is fermented with the skins, coloring the juice and giving it a similar taste to red wine.

    Law Bird won’t have a set number of wines all of the time, says Pierce, but oenophiles can look forward to a variety of natural wines, smaller batch wines, and wines from regions typically overlooked, such as Slovenia and Georgia.

    As far as cocktails, Williams Pierce aims to continue what she’s done through their speakeasy pop-ups as Four Thieves Thirst Parlour, as well as in her work at the now-closed Curio and other bars and restaurants throughout Columbus.

    “We just want to continue to do unique flavor combinations paired in seemingly simple or intriguing ways,” she said. “I think people want variety, and it’s why you’re able to do such great things with spirits. They add so much complexity to a whole cocktail, a well-rounded drink. And people want to continue to try new things.”

    The Pierces are looking to execute it all in a “light, bright and funky” space. No set timeline has been determined for the buildout.
